For those of you who have followed in the past...this blog, formerly known as "The Health Nut", is now called "Erica's Eats.
I cannot believe that it has been almost a year since I posted on this blog the last time. I had every intention of starting a food blog based on healthy eating principles, and I wanted to share a few tips along the way…
Unfortunately, life happens, and I was unable to keep up. However, in the New Year, I am taking a new approach to this blog. I want it to be fun and creative. Not that it was boring before, but I have to admit to myself it was a little “ho-hum”. Instead of just babbling on about what I eat, I am going to write about things I’ve seen in the media, new recipes I have tried (or would like to try), and I anticipate adding new tabs with links to other food blogs and healthy eating websites, as well as exercise tips, etc. I may go ahead and mention running too-seeing as how I just registered for my 12th marathon!
Ambitious? Yes. Maybe gonna take a while to get into the swing of things and teach myself how to do all of this? Of course, but anything worth having requires work and patience right?
I am not going to lie to myself or anyone who may be reading this, I am BUSY! I am in my last semester of school, applying for internships, trying to get my house ready to put on the market, planning my move to Birmingham, and of course planning my wedding that will take place just 10 days after I graduate! Please be patient with me as I work through this process, and try to create a blog that will entice and excite.
